  3. Finely chop the onion and garlic.
  4. Mix zucchini, bacon, onion, garlic, eggs, flour, salt, and plenty of black pepper until just combined.
  5. Heat a thin layer of oil in a wide pan.
  6. Drop spoonfuls of the mixture into the pan and flatten slightly.
  7. Fry until the bottoms are deeply golden, then flip and cook until set.
  8. Finish with chopped herbs and serve immediately.
