- Cut the salmon into large bite-size cubes and set aside.
- In a small bowl, stir together the pineapple juice, vinegar, soy sauce, honey, cornstarch, and water until smooth.
- Heat the oil in a wide pan over medium-high heat.
- Add the salmon and sear briefly on all sides, just until lightly coloured.
- Remove the salmon from the pan and keep it nearby.
- In the same pan, add the onion, bell pepper, garlic, and ginger.
- Cook for a couple of minutes until fragrant but still crisp.
- Pour in the sauce and let it bubble until slightly thickened.
- Return the salmon to the pan and gently turn it through the sauce.
- Cook for another minute, just until everything is coated and glossy.
Variations (changed perspective)
If you’re cooking from the fridge, this dish adapts easily. Swap the bell pepper for leftover vegetables, or use orange juice instead of pineapple juice for a softer sweetness.
