  3. Add garlic and ginger.
  4. Let them soften for a moment, just until fragrant.
  5. Pour in the tomatoes.
  6. Season with 1 tsp salt, ½ tsp pepper, and sugar.
  7. Let it simmer gently until the sauce thickens slightly.
  8. Season the trout with the remaining ½ tsp salt and ¼ tsp pepper.
  9. Nestle the fillets into the sauce.
  10. Cover loosely and cook until the fish turns opaque and flakes easily.
  11. Finish with the remaining 1 tbsp olive oil.
  12. Scatter herbs over the top.
  13. Serve straight from the pan.
