This frozen dessert is all about contrast: ripe mango sweetness against sharp, clean lime. It’s the kind of thing you make on a warm, unhurried day, tasting as you go and adjusting until the flavor feels awake.
Ingredients
- 2 very ripe mangoes, peeled and cut into chunks
- Freshly squeezed juice of 1 large lime (plus zest from half)
- 2–3 tablespoons fine sugar or honey (to taste)
- A small pinch of salt
- 2–4 tablespoons cold water, only if needed
Instructions
- Start by freezing the fruit. Spread the mango chunks on a plate and freeze until solid.
- Place the frozen mango in a blender or food processor and pulse until crumbly.
- Add lime juice, lime zest, sugar, and salt. Blend again, scraping down the sides, until thick and smooth.
- If the mixture struggles to move, add cold water a spoon at a time — just enough to help it blend.
- Taste. Adjust lime or sweetness if needed.
- Serve immediately as soft ice, or transfer to a container and freeze for 1–2 hours for a firmer scoop.
Common Mistakes:
- Using underripe mango — it dulls the flavor completely.
- Adding too much liquid too early, which turns the ice watery.
- Skipping salt — it quietly sharpens both mango and lime.
