Cooking a turkey crown doesn’t have to take over the whole day. The air fryer keeps the meat moist, the skin lightly golden, and the timing manageable even when you’re cooking other things at once.

Instructions

  1. Remove the turkey crown from the fridge and let it sit at room temperature while you prepare the seasoning.
  2. In a small bowl, mix the butter with olive oil, salt, pepper, thyme, sage, lemon zest, and garlic.
  3. Gently loosen the skin of the turkey with your fingers, keeping it attached at the edges.
  4. Spread about two-thirds of the butter mixture directly onto the meat under the skin.
  5. Rub the remaining butter lightly over the skin.
  6. Pour the chicken stock into the bottom of the air fryer basket or tray.
  7. Place the turkey crown skin-side up, keeping it raised above the liquid.
  8. Cook at 180°C / 355°F for 30 minutes.
  9. Lower the temperature to 165°C / 330°F and continue cooking for another 15–25 minutes, until the meat is cooked through and still juicy.
  10. Rest the turkey loosely covered for at least 15 minutes before slicing.

This turkey is ideal if you’re planning ahead. Slice leftovers thinly and store them with a little of the cooking juices — they stay moist for sandwiches, salads, or quick reheated dinners the next day.
