- Remove the turkey crown from the fridge and let it sit at room temperature while you prepare the seasoning.
- In a small bowl, mix the butter with olive oil, salt, pepper, thyme, sage, lemon zest, and garlic.
- Gently loosen the skin of the turkey with your fingers, keeping it attached at the edges.
- Spread about two-thirds of the butter mixture directly onto the meat under the skin.
- Rub the remaining butter lightly over the skin.
- Pour the chicken stock into the bottom of the air fryer basket or tray.
- Place the turkey crown skin-side up, keeping it raised above the liquid.
- Cook at 180°C / 355°F for 30 minutes.
- Lower the temperature to 165°C / 330°F and continue cooking for another 15–25 minutes, until the meat is cooked through and still juicy.
- Rest the turkey loosely covered for at least 15 minutes before slicing.
