- Start with the salmon. Pat the fillets dry and rub them with 1 tbsp of the olive oil.
- Season lightly with salt, pepper, and a little lime zest. Set aside while the grill heats up.
- Prepare the salsa first so it has time to settle. Dice the avocado and tomato into small chunks.
- Finely chop the onion and herbs.
- Combine everything in a bowl, drizzle with the remaining olive oil, and add a squeeze of lime juice.
- Season gently and toss once or twice. Don’t overmix.
- Heat the grill or grill pan until hot.
- Place the salmon skin-side down and cook for about 4–5 minutes.
- Flip carefully and grill for another 2–3 minutes, just until the fish flakes easily and stays juicy.
- Transfer the salmon to plates.
