  1. Start with the bread. Heat a dry pan and add the torn pieces, letting them toast slowly until the edges turn crisp and lightly golden. You’re not aiming for croutons that are hard all the way through — just a bit of crunch on the outside while the inside stays slightly soft.
  2. Take them out and let them cool for a minute so they hold that texture.
  3. In the same pan, add the ham and warm it briefly. It doesn’t need to crisp — just a short moment so it softens and releases a bit of aroma. If it starts to brown too much, it loses that delicate texture.
  4. In a large bowl, combine the salad greens, tomatoes, and shallot.
  5. Instead of making the dressing separately, just drizzle the olive oil, honey, and vinegar directly over the salad. Add black pepper and toss lightly. It doesn’t need to be perfectly emulsified — once everything mixes, it comes together on its own.
  6. Add the warm ham and toasted bread at the end. Toss gently so some of the bread picks up the dressing, but not all of it — a mix of slightly soaked and still-crisp pieces is what makes it interesting.
  7. (I once added the bread too early and mixed everything too much — it turned soft almost immediately. Now I always add it last and barely toss.)
  8. Serve right away while there’s still contrast between warm and cool, soft and crisp.
