These turkey avocado lettuce cups are my go-to when I want something lighter but still filling. Everything comes together in one bowl, no complicated steps, no fuss. They’re easy to portion, easy to eat, and perfect for a quick lunch break.

  1. Heat a skillet over medium heat and add the olive oil until it shimmers slightly.
  2. Add the ground turkey and break it apart with a spoon as it cooks.
  3. Season with smoked paprika, garlic powder, salt, and pepper, stirring until the meat turns golden and smells savory.
  4. Tip: Let the turkey brown a little before stirring too much for better flavor.
  5. Remove the turkey from the heat and let it cool for a few minutes so it doesn’t melt the avocado.
  6. While it cools, dice the avocados and cucumber into a large mixing bowl.
  7. Add the Greek yogurt, lemon juice, and parsley, then gently fold everything together.
  8. Spoon the cooled turkey into the bowl and mix until the filling looks chunky but evenly coated.
  9. Taste and add more salt, pepper, or lemon if needed for brightness.
  10. Tip: Don’t mash the avocado completely — you want creamy chunks, not a paste.
  11. Separate the lettuce leaves and pat them dry so they hold the filling better.
  12. Spoon the turkey avocado mixture into each lettuce cup and arrange on a plate.
  13. Serve right away while the lettuce stays crisp, or chill briefly for later.
  14. Tip: If packing for lunch, store the filling separately and assemble right before eating.
