  1. 1 lb chicken tenders (or chicken breast cut into strips)
  2. ½ cup breadcrumbs (panko if you have it)
  3. ¼ cup grated parmesan
  4. 1 egg
  5. ½ tsp salt
  6. ½ tsp black pepper
  7. 1 tbsp olive oil (or spray)

Instructions

  1. Start by patting the chicken dry. It’s a small thing, but it actually helps the coating stick better.
  2. In one bowl, beat the egg. In another, mix breadcrumbs, parmesan, salt, and pepper.
  3. Dip each piece of chicken into the egg first, then into the breadcrumb mix. Press it in slightly — not aggressively, just enough so it sticks. If it feels too light, add a bit more coating.
  4. Place the coated chicken on a plate. Try not to stack them (they’ll stick together and ruin the vibe).
  5. Preheat your air fryer to 380°F.
  6. Lightly brush or spray the chicken with oil. Don’t skip this — it’s what gives that golden, crispy finish instead of something pale and dry.
