Instructions

  5. Rinse the konjac noodles under cold water, then drain very well.
  6. Heat sesame oil in a pan over medium heat.
  7. Add the remaining garlic (and ginger if using) and cook until fragrant.
  8. Stir in zucchini, bell pepper, and carrot, cooking for 3–4 minutes until crisp-tender and bright.
  9. Add the noodles, soy sauce, and honey, tossing until everything looks glossy.
  10. Cook for another 2–3 minutes so the noodles absorb the savory sauce.
  11. Tip: Keep the vegetables slightly crunchy — it makes the dish taste fresher and lighter.
  12. Divide noodles and vegetables between plates.
  13. Top with the warm salmon fillets.
  14. Finish with chili flakes and a squeeze of lime juice if desired.
  15. Tip: A little citrus at the end makes all the flavors taste sharper and more vibrant.

Storage Tips

Store any leftovers in an airtight container for up to 2 days. When reheating, do it gently in a pan and add a splash of soy sauce or a little water to loosen up the noodles. For the best flavor, add a bit of lime juice at the end after reheating.
