Instructions

  1. Season the chicken with salt and pepper, then place it skin-side down (if using thighs) in a large pan with olive oil. Let it cook without moving too much so it gets that golden color. This is where the flavor starts building.
  2. Flip and cook the other side briefly, then remove the chicken and set it aside. Don’t clean the pan—you want all those browned bits.
  3. Add onion straight into the same pan and cook until soft, then add garlic and stir for about 30 seconds. You’ll smell it right away.
  4. Pour in the rice and stir it around so it picks up all that flavor from the bottom. This step seems small, but it makes a difference.
  5. Add broth, paprika, oregano, chili flakes, and tomatoes if using. Stir once, then place the chicken back on top.
