- Add the skyr to a bowl. It should be thick — that’s what gives you that pudding texture later.
- Stir in cocoa powder and protein powder first. It’ll look a bit dry at this stage, kind of like it won’t come together… just keep mixing. It smooths out.
- Add maple syrup (or honey) and mix again until everything turns creamy and evenly chocolatey.
- Now stir in the chia seeds. Make sure they’re evenly distributed — otherwise you’ll get random clumps later.
- Let it sit for about 5 minutes, then give it one more quick stir. This helps prevent the seeds from settling weirdly at the bottom (learned that the annoying way).
- Transfer to jars or bowls and place in the fridge for at least 2 hours.
- When you take it out, it’ll be noticeably thicker — more like a real pudding than a yogurt mix.
