A couple of things that actually make chicken better (from experience)
If chicken turns out dry, it’s almost always just overcooked — not the recipe. Taking it off the heat slightly earlier helps more than any marinade.
And if something tastes a bit flat at the end, it usually needs one of three things: a bit of salt, something acidic like lemon, or a little fat. Fixing that at the end makes a bigger difference than changing everything.
Chicken doesn’t need to be complicated to be good. Most of the time, it’s just about picking a direction and keeping it simple enough that you’ll actually make it.
