This is one of those meals that feels like you put in way more effort than you actually did.
These stuffed sweet potatoes come out soft and almost caramel-like inside, while the chickpeas add a little crunch and spice. Everything gets finished with creamy feta and that slightly nutty tahini drizzle.

- Start with the sweet potatoes. Give them a quick scrub, then poke a few holes with a fork so they don’t burst in the oven.
- Place them on a tray and bake at 200°C / 400°F for about 40–50 minutes. You’ll know they’re ready when the skin looks wrinkled and a knife slides in easily without resistance.
- While they’re baking, move on to the chickpeas. Pat them dry first — this actually matters if you want them to roast instead of steam.
- Toss them with olive oil, smoked paprika, cumin, chili flakes, and salt, then spread them out on a tray. Don’t pile them up — space is what makes them crisp.
- Roast for about 20–25 minutes, shaking once halfway through. They should look slightly golden and smell toasty.
- For the feta, mash it with Greek yogurt until it turns creamy but not completely smooth — a little texture makes it better. Add a squeeze of lemon to wake it up.
- In a small bowl, whisk tahini with garlic, lemon juice, and a bit of water. At first it might look thick or weird (this is normal — it smooths out as you keep mixing) — keep mixing and it will loosen into a smooth sauce.
- Once the sweet potatoes are ready, slice them open and gently fluff the inside with a fork.
- Add a handful of greens right on top so they soften slightly from the heat. Then spoon over the feta, add the chickpeas, and finish with the tahini sauce.
