Ingredient Notes & Substitutions

If you don’t have dark chocolate, milk chocolate works too — it’ll just be a bit sweeter and more mellow. If you’re out of heavy cream, half-and-half is a good swap.

No banana? You can use strawberries, raspberries, or even a spoon of nut butter for a different kind of center. And if you don’t have cocoa powder, try rolling them in toasted coconut or finely chopped nuts instead — it adds a nice texture too.

Instructions

  1. Place the chopped chocolate in a small saucepan with the heavy cream and butter.
  2. Heat gently over low heat, stirring until smooth and glossy.
  3. Remove from heat and let the mixture cool to room temperature.
  4. Tip: Let it cool fully so it firms up faster in the freezer.
  5. Spoon small mounds of the chocolate mixture onto a lined plate.
  6. Freeze for about 20–30 minutes, until solid to the touch.
  7. While the centers chill, let the vanilla ice cream sit at room temperature until soft enough to scoop but still cold and thick. It should hold its shape when pressed.
  8. Scoop a generous spoonful of ice cream and flatten it slightly in your palm or against a piece of parchment paper.
  9. Place one frozen chocolate piece or a small chunk of banana or berries in the center.
  10. Gently fold the ice cream around the filling, sealing it completely, and roll between your hands into a smooth ball.
  11. Tip: Work quickly so the outside stays firm and doesn’t melt.
  12. Roll each finished ball in cocoa powder or crushed cookies, coating lightly but evenly. The coating should cling without getting thick.
  13. Place the shaped balls on a tray lined with parchment paper.
  14. Freeze for at least 1 hour, or until fully firm.
  15. Tip: If they soften while shaping, return them to the freezer for 5–10 minutes before continuing.

Variations

If you want a fun twist, try using peanut butter mixed with a little powdered sugar as the center — it turns into that soft, sweet surprise inside.

You can also switch up the ice cream. Chocolate or caramel works really well if you want a stronger, richer flavor on the outside.

And for a nice contrast, add a tiny pinch of sea salt to the chocolate center — it really brings everything together.
