  2. Add the ripe banana, broken into a few chunks so it blends smoothly.
  3. Blend for a few seconds until the mixture starts to look thick and creamy.
  4. Tip: The avocados should feel soft when you press them — firm ones won’t blend into a silky mousse.
  5. Add the cocoa powder, maple syrup (or honey), milk, vanilla, and a pinch of salt.

  12. Cover and chill in the fridge for at least 30 minutes.
  13. Once cold, the mousse thickens into a pudding-like texture that holds its shape on a spoon.
  14. Serve straight from the fridge, topped simply if you like.

Storage

This mousse is best on the first day, when it’s nice and fresh with that perfect thick texture. You can keep it covered in the fridge for up to 2 days. If it gets a bit too thick overnight, just give it a gentle stir before serving.
